Grease interceptors and grease-removal devices that pretreat fats, oils, and grease (FOG) bearing wastewater from food-service establishments before it discharges to the sanitary building drain or public sewer. Covers hydromechanical grease interceptors (HGI) — point-of-use under-fixture units and larger flow-rated units rated per PDI G101 and ASME A112.14.3 — automatic grease removal devices (GRD) per ASME A112.14.4, and gravity grease interceptors (GGI) — large in-ground or exterior precast concrete vaults sized by liquid volume and retention time. Addresses interceptor type selection, flow-rate and volume sizing methods, flow control fittings and air intake, trapping and venting, materials, accessible covers and maintenance access, sample and monitoring ports, the connection of grease-laden fixtures, and the operations and pump-out maintenance program.
